CHOCOLATES
The chocolatier tradition has existed throughout Gipuzkoa, with very well-known brands.
Elgorriaga (Irun), Orbea and Zahor (Oñati), Saint-Gerons (Mendaro), Txokolateixia Museum in Oñati, Rafa Gorrotxategi Chocolate Museum (Tolosa)... You can see the traditional facilities and methods of making chocolate at Saint-Gerons in Mendaro, at the Txokolateixia Museum in Oñati and at Rafa Gorrotxategi's Chocolate Museum in Tolosa.
And don’t forget to try the rest of the local confectionery. The tejas (petit fours) and chocolate cigarillos from Tolosa, Basque cake, the San Sebastian pantxineta (custard slice), the filled cupcakes from Bergara, and the Ignacio almond cakes from Azpeitia are some of the highlights of the sweet treats on offer in our bakeries.
FISH PRESERVE
Artisanal preserves, originating in each port to make up for the seasonal deficit, evolved into today's brands, still artisanal but technified in packaging. Piperras (chilli peppers) from Ibarra are also distributed in jars and are considered to be essential in alubiadas (bean stews) and to accompany other dishes.
